John Bolton is owner of Salt Lake Roasting Co.. He started roasting in fall 1981 on a 10-kilo Probat after years as a chef over three restaurants at Snowbird. The first retail shop opened at 400 S. and 249 E. in 1983.

He has traveled more than 25 coffee-producing countries and buys organically produced coffees when possible. The current downtown cafe is 820 E. 400 S., Salt Lake City. The motto is Coffee without Compromise.
